Save room for dessert because BlackStar Pastry and N2 Extreme Gelato are combining sweet forces to bring you the ultimate summer dessert bar. Bringing together BlackStar’s artisan craftsmanship with N2’s mad-scientist ways each will be offering their signature favourites; BlackStar’s self-proclaimed ‘most photographed cake in Sydney’ the Strawberry Watermelon Cake; and from N2 Extreme Gelato their cheekily signature ‘Brokeback Mountain’.
The third offering draws on their similar beliefs of honest cooking and fresh experimentaion, as N2 and BlackStar combine forces to create a one-of-a-kind, never-to-be-repeated, SpectrumNow Festival Surprise. It’s a collab your tongue won’t want to.

Rangers Texas BBQ is Sydney’s original mobile American Style wood fired “Low and Slow” BBQ Caterer. Cooking on a custom built BBQ Smoker Pit imported from Houston Texas, Rangers Texas BBQ focus on traditional Texas flavours and techniques. Come and try some of our Beef Brisket or Pulled Pork which have been smoked with wood for up to 12 hours.
The search for the most succulent, crisp and spicy Buffalo-style chicken wings available across our great and vast land began a number of years ago. Our quest encompassed different types of chicken, a range of textures and tastes of sauces and a variety of cooking methods spanning the Americas to Europe…. But we remaineded unsatisfied. The elusive perfect chicken wing was still out there. We had to make our own.
With the best quality chicken, deep fried in our special blended vegetable oil, coated in our super-charged indulgent sauces and dipped in our lovingly made blue cheese or ranch dressings, we have created, what we feel is, the holy trinity of wings this side of Buffalo!

Do Me Slowly is pulled by Petit Bistro to present their slow cooked meat offer. The recipe is simple and complicated at the same time. We source our meat from the best suppliers and cook them using techniques chef uses in restaurants. The result is an outstanding product, flavorsome, delicious and nourishing.
Pulled pork cooked for 12h with a mix of cajun spices providing a lot of flavors, on a bed of a light slaw: cabbage, carrots sesame oil and apple cider vinegar. Delicious pickles, fried shallots and a light spicy mayo (egg free dairy free).
The lamb is just perfectly cooked so meat falls of the bone without loosing all its consistency. Lightly flavored with herbs, it goes perfectly with the light slaw cabbage, carrots sesame oil and apple cider vinegar. Caramelized onions a tahini dressing are perfecting the burger!
